Mexican Chicken and Sweet Potato Stew

At least several times a week you will see or hear something in the news that involves our food or the food industry. Each time there is another reason for a news article something becomes more apparent and leads people to question the practices of the food industry. Today there are two articles that I have read. One is about flavorings added to orange juice that is labeled as being 100% juice and the other article was about the recall of thousands of pounds of beef due to an E. coli outbreak. Getting back to nature and a diet in which you Eat Nourishing food, such as the Paleo diet, is something many people are doing today.
A Paleo Diet Recipes for Mexican chicken and sweet potato stew uses butter made from a grass fed cow. In a large soup pot over low heat, melt this butter. Add two medium onions that have been chopped and sauté until the onion is translucent. Add four cloves of minced garlic and sauté just a minute more. Add two teaspoons of sea salt, two tablespoons of chili powder, one tablespoon each of ground cumin and cocoa powder, one teaspoon of dried oregano, and one-half teaspoon each of ground cinnamon and crushed red pepper flakes. Pour in one quart of homemade chicken broth slowly. Add three large sweet potatoes that have been peeled and cut into one inch cubes. Bring to a boil, then reduce heat and simmer. When sweet potatoes have become tender, add one quart of crushed tomatoes and one pound of cooked and cubed chicken and bring to simmer. While this is simmering, dissolve one and one-half tablespoons of arrowroot powder in two tablespoons of cold water. Pour this slowly into the stew while stirring. Continue to simmer until stew thickens and chicken is warm. When serving, top with sour cream, cilantro and a squeeze of lime if desired.
